While I love the traditional and modern desserts made with fresh pumpkin, my heart belongs to all the wonderful savoury Greek recipes that call for pumpkin and winter squash. Most people don’t think of winter squash and pumpkin as popular ingredients in Greek cooking, but they are and have been long enough to have evolved into some of the best regional Greek recipes around.
