Greek home-cooking: Stuffed Courgettes With Minced Meat

Now that we’ve all taken to testing our culinary skills, Christina Vlahouli urges us to try out easy-to-make Greek comfort food. Her courgettes with minced meat recipe captures the wholesomeness of home-cooking as few dishes do.

Ingredients:

  1. 6-8 medium round courgettes
  2. 1 kilo ground beef
  3. 2 tablespoon olive oil + a little for brushing the courgettes
  4. 1 large onion, chopped
  5. 4 cloves garlic minced
  6. 1 cup fresh tomatoes, diced or 1 can chopped tomatoes
  7. 1 red bell pepper, cubed
  8. 1 green bell pepper, cubed
  9. 2 tsp oregano
  10. 1 tsp smoke paprika powder
  11. 1/4 teaspoon salt
  12. 1/4 teaspoon black pepper
  13. 1 cup graviera cheese, grated

To Garnish:

  • Fresh parsley, chopped

Instructions:

  1. Preheat oven to 180°.
  2. Slice the top of the courgettes and scoop the inside out, chop it up and set aside.
  3. Brush courgettes with olive oil, and sprinkle with salt and pepper. Then place on a baking tray lined with baking paper, cut side down and bake for for 5-10 minutes, flip and turn oven to broil, and broil for one 1 minute.
  4. Heat olive oil in a non-stick skillet. Cook onion for 2-3 minutes or until it begins to golden.
  5. Add the garlic and cook for a few seconds. Then add bell peppers and stir. Add meat and cook until it’s no longer pink, 3-5 minutes.
  6. Add the chopped tomatoes sauce, the chopped courgettes, the spices and salt and pepper. Simmer for 8-10 minutes or until most juices have absorbed.
  7. Spoon mixture into the round courgettes and top each with cheese.
  8. Bake for 15-20 minutes or until the cheese is melted and bubbly.
  9. Remove from the oven sprinkle some fresh parsley and serve.
