Greek home-cooking: Stuffed Courgettes With Minced Meat
Now that we’ve all taken to testing our culinary skills, Christina Vlahouli urges us to try out easy-to-make Greek comfort food. Her courgettes with minced meat recipe captures the wholesomeness of home-cooking as few dishes do.
Ingredients:
- 6-8 medium round courgettes
- 1 kilo ground beef
- 2 tablespoon olive oil + a little for brushing the courgettes
- 1 large onion, chopped
- 4 cloves garlic minced
- 1 cup fresh tomatoes, diced or 1 can chopped tomatoes
- 1 red bell pepper, cubed
- 1 green bell pepper, cubed
- 2 tsp oregano
- 1 tsp smoke paprika powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup graviera cheese, grated
To Garnish:
- Fresh parsley, chopped
Instructions:
- Preheat oven to 180°.
- Slice the top of the courgettes and scoop the inside out, chop it up and set aside.
- Brush courgettes with olive oil, and sprinkle with salt and pepper. Then place on a baking tray lined with baking paper, cut side down and bake for for 5-10 minutes, flip and turn oven to broil, and broil for one 1 minute.
- Heat olive oil in a non-stick skillet. Cook onion for 2-3 minutes or until it begins to golden.
- Add the garlic and cook for a few seconds. Then add bell peppers and stir. Add meat and cook until it’s no longer pink, 3-5 minutes.
- Add the chopped tomatoes sauce, the chopped courgettes, the spices and salt and pepper. Simmer for 8-10 minutes or until most juices have absorbed.
- Spoon mixture into the round courgettes and top each with cheese.
- Bake for 15-20 minutes or until the cheese is melted and bubbly.
- Remove from the oven sprinkle some fresh parsley and serve.
